Romantic Damask

Lately I've been seeing damask styles everywhere! I actually think I might be late to jump on this technique. I've specifically seen them in beautiful cake designs. I decided to try it out recently and was quite pleased with the results.


This cake was quite daunting to me as I hadn't done something like it before. I planned and researched and imagined myself making it for a whole week! I am grateful that I was given the opportunity to make it.

But imaging yourself doing something is TOTALLY different from actually doing it (duh).

For example, I didn't imagine all the dishwashing, cleaning, scrubbing, and back pain but all those things were as real as ever!

That's probably what I hate most about making cakes...the cleaning :(


Back to the cake...I was super excited when I got my order of stencils from Flour Confections. I love that store and spend hours on their website all day errrday! They are so efficient with delivery and answering questions and have a lot of products that you can't find at other baking supply stores. Their prices are also not bad...compared to some other stores *cough* Golda's Kitchen *cough*.


I was so nervous about getting the stencilling right. I watched many Youtube videos that said it was tricky and gets better with practice. It definitely wasn't as bad as I had imagined it to be!!


Mind you, there were still some things I wanted to scrap and fix but all in all, I think the cake turned out beautiful and I'm happy that the people I made it for were also happy. Inside is a yummy rich chocolate cake with coconut swiss meringue buttercream....THE bomb dot com!


I miss my photographer roommate who took such beautiful pictures of my creations. I'm doing my best with my little point and shoot but honestly...apples and oranges. And I don't have the creative angle and eye of a photographer. MUST....LEARN....PHOTOGRAPHY!

Return of the Cake Pop


Last week I had a cupcake project lined up for the upcoming Easter holiday. Unfortunately, things didn't turn out as planned and pretty soon I had 24 cupcakes that looked like a mini version of this disaster that had happened before. I'm starting to think that it's either the baking soda that I'm using, or my roommates are giants who stomp around and cause my cupcakes to deflate. Both are very plausible reasons.



Anyway, instead of throwing out a batch of cupcakes that looked terrible but tasted great, I was persuaded to turn them into cake pops.

Oh the dreaded cake pop.


The last time I made these, I had chocolate in my hair, a shake in my hand, and a crazy look in my eye.

Cake pops are not my most favourite thing to make. To be fair, I've only given them one try but that was enough for me to file the idea away and nervously laugh at trying it again.

Don't get me wrong. They're cute as a button. Looking up pics of other people's cake pops makes me want to try my own.


But then the horrible memories come flooding back.

The biggest problem I have is that it is So. Damn. Time. Consuming.

They're expensive, finicky, and take a huge set up too.

All for 5 minutes of a bite of cake.

Anyway....enough with my complaining.


This time around I used chocolate melts from Bulk Barn and I noticed that the chocolate cracked and oil oozed out of the crack. Not a cute look. They were easier to melt and work with though.

I spread out the work over a few days rather than trying to cram it all into one day which helps loads!

I also decided to add Nutella instead of buttercream icing to the cake crumbs which ups the yumminess factor but adds to the weight of each cake pop.


Although I don't like making them (and did I mention all the dishes I needed to wash?) they are definitely cute and can make for really cute designs. I'm going to keep working on them and trying to figure out a method that works best for me. When I do, I'll do an in depth tutorial called 'The Idiot's Guide to Cheap Easy and Cute Cake Pops'.

Spring Flowers!


I feel like a bear that just came out of hibernation.

The weather has been soooo unpredictable! Back in fall, people were saying that we were going to have one of the hardest winters ever. So obviously I went and bought a really warm (and expensive) coat and a really sturdy (and expensive) pair of waterproof boots.
And then winter didn't come.


But I'm not disappointed. As I might have mentioned before, I wasn't really built for winter. Not one hair on my head likes winter or snow or cold.

And then all of a sudden it became really warm and breezy and sunny and just DELICIOUS!


After a long time, I was able to try something new in terms of baking and decorating to celebrate the good weather.

I baked some chocolate peanut butter cupcakes with a recipe I found in a cupcake book. I have to do a review on this book sometime soon.


I also watched a video on some pretty fondant flowers and was inspired to recreate the look. I gave it a try and it was pretty easy!! It took me a few tries to get the hang of it but the outcome is quite pretty.

If you want to try this and think the video is a little unclear, let me know and I'll do another post with step by step pictures and explanations.

I'm also really happy with how I photographed these. Obvious credits go to the sunlight but I like to think I had something to do with it too :)

Do Not Resuscitate Cake

Readers of my blog...I come to you today from a place of failure and embarrassment.

Often times, I am so caught up in doing new things and succeeding that when something like this happens, I am shaken to the core...THE CORE.

I call it, the Do Not Resuscitate cake.

It started off like any normal cake would have. I lovingly measured out the ingredients...gently combined them in the bowl...carefully added the water...cautiously mixed it all up.

Then I poured it into my 8 inch pan and popped it in the oven with dreams of a happy healthy brown chocolate baby....I mean cake.

10 minutes later, I was opening the oven door to what appeared to be the purple thing from ghostbusters and an exploding volcano....TWO exploding volcanoes. I didn't even bother to take a picture...it was that depressing.

It was overflowing and there was a gigantic solid thing protruding out of the middle which looked very much like a certain body part but I'm going to keep this space PG...so I'll leave it to your imagination.

I didn't even fill it that much...it was just a TAD over the mark I usually fill at.

So anyway....my roommate and I made the executive decision to take it out, empty some of the batter and pop it back in.

20 mins later I opened the oven door to find what appeared to be a landslide in my cake. It had completely sunk in the middle...like absolutely completely. I didn't even know what to do so I just sat down and did some heavy breathing exercises while my roommate tried to convince me that it wasn't that bad...yeah right! Who was she kidding!?


That's why its called the Do Not Resuscitate cake...we should have let it go the first time.

Have you guys seen the video of the bride having a crisis and cutting her hair while her friends convince her that it doesn't look that bad. It was like that....exactly like that..

I've gone through little problems through my various baking projects but a complete failure like this hasn't happened in a long while.

Had I lost it? Was this baking thing a momentary, temporary phase of my life that is now dead and gone?

But even though it looked terrible and horrible, it still tasted amazing...gooey and moist and rich and chocolatey. So we sat there and ate this failed cake out of the pan while bringing my baking self esteem back up.

Nevertheless, I am back on my baking tip and made some of my best creations yet!

Moral of the story; sometimes, no matter how right you do things, the result is a complete mess and you find yourself just shit outta luck. Don't give up. Find a lesson in the experience and if not...have a good laugh and move on.

My second birthday cake!

First of all, please accept my MOST deepest and sincere apologies for missing MM this week. I had something planned but unfortunately, with moving, and my sister's surprise birthday party and everything in between, life got hectic. REGARDLESS, no excuse is good enough as this was my second week *runs into corner and hides*

BUT...hopefully this post will bring me back in the good books. I've been planning and scheming and organizing my sister's party for the past few weeks and have been ITCHING to blog about it. It's finally over and I can blog to my heart's content!!

The first birthday cake I ever made was for a very good friend of mine. It was a 2 tiered square cake. I'll do a more detailed post on it later. It was good for a first attempt and I had a TONNE of help from my roommate but I still couldn't see past its flaws. The Transformers cake I made for my sister was my second ever and took a tonne of planning and research. I made a cupcake tower...yes..the tower...as well as all the cupcakes and the cake at the top. I also had to do all this into the very late hours of the night as it was a surprise.

I used my very favourite chocolate cake recipe for the 8 inch cake. I had to buy the fondant and the buttercream for the crumb coat because I was pressed for time and had no energy. I used chocolate buttercream to fill the cake after I torted it and also used it to cover the cake. I made sure the cake was even and flat and straight. I watched videos on YouTube like this and this to figure out a technique.

I then covered the cake in yellow fondant. I coloured all the fondant 24 hrs before hand. That was definitely the most fun part about this cake....okay I'm lying. It was a pain. Especially getting the black to be black. I sweat up a storm and my shoulders ached the next day.

Once I got the cake covered, the rest was easy. I printed out a picture of the Transformers logo thingy...which in case you haven't caught on is the theme of the cake( I wondered many times in this process whether I had a sister or a brother. Trying to make a transformers cake look girly is VERY hard) and used a knife to free hand cut the different parts out of grey fondant. I guess it would have looked neater if I traced around the printout and cut it into sections but at 2 in the am, I wasn't thinking straight.

I mixed some silver lustre dust with peppermint extract and brushed it onto the cutouts. I painted some areas more dense than others to get a metally, worn out effect. Not sure if it worked :S. I then positioned it onto the cake and cut black strips of fondant to add to the sides. TA DAAA...the cake was ready to 'roll out'...get it? like the Autobots rolling out....okay I'll stop.




So that was it. I'll do another post on the cupcakes and the cupcake tower all made from scratch. I am so proud of this cake and the look on my sisters face when she saw it was totally worth it!!

Chocolate Obsession

I have found a really good chocolate cupcake recipe that I'm addicted and can't bring myself to try a different version. I finally found another recipe to try but it was pretty much the EXACT same recipe I had with a bit of instant coffee paste thrown in!!

If you haven't caught on by now, I'm on a coffee/strawberries/chocolate cake rut. For some reason, strawberries are always my go to fruit for both decorative and flavour needs. I don't even think I like the taste of strawberries as much as the idea of strawberries. They're just so pretty! Like little red angels with green fringy wings.
As for the cupcakes...well I take chocolate over vanilla any day...including those in which I'm sick of chocolate.... wait there are no such days.
Coffee....just saying the word makes me smack my lips. I don't drink it often...well...not as often as other addicts. But when I do, I take my poison in iced form. What did I ever drink before they invented iced coffee? Oh that's right....crap.

I have a iced coffee recipe bookmarked that I am just ITCHING to try. But judging by the process and materials needed, I think I'll wait until I move back to school where I will be free to do whatever I want in the kitchen. Having a mother who is VERY picky about her kitchen (and the rest of the house for that matter) sometimes causes you to postpone certain projects.
So the point of this post? To show off some cupcakes I made a while ago for some friends. My fav chocolate cupcake recipe topped with chocolate buttercream and a chocolate covered almond....yum. Make these and have one... or nine. Go ahead, be good to yourself.
In other news, I'm thinking about taking some cake decorating classes. The Wilton ones sound good and are cheap but I think mycakeschool.com seems more flexible to my schedule. Will let you know what I decide and how it goes. Also if you have any experience with these, I would love to hear!

Fruit Arrangement

As much as I love to bake, sometimes nothing tastes as good as some fresh juicy fruit. I recently attended a friend's bbq and could not decide what to make. I also just been through surgery so I didn't want to take on a new project that would be time consuming. I finally decided last minute that I would make some chocolate dipped strawberries and grab some other fruit and make an arrangement out of it...kind of like Edible Arrangements but not as expensive!!

I was a bit nervous starting this project because I didn't want it to look like a scraggly bush of a few strawberries on sticks. I am a bit of a perfectionist and so made sure to research different techniques and do's and don'ts.

I was quite proud of the final product. For my first time, it came out pretty well. It definitely wasn't as hard as I was expecting it to be!
This arrangement fed about 10 people.
I bought a little ceramic flower pot from the dollar store and also managed to get a big block of flora foam at the florist. I didn't even use half the foam so I now have enough to use for other projects.

I cut the flora foam to size and stuffed it in the pot with about half an inch showing up out of the pot.

I made the chocolate dipped strawberries the night before. I melted some chocolate chips in the microwave until they were a non-drippy but runny consistency. Make sure its not too thick or else it will clump onto the berry. You also don't want it to be too runny or else it will drip off your berry. I find a good way to tell is to dip a spoon into the chocolate and turn it right side up. If it holds to the spoon and doesn't travel downwards its golden. You might have to go back an reheat as needed since the chocolate will lose heat and start to harden again.

Make sure you have washed and dried your berries thoroughly and make sure they are room temperature which helps the chocolate stick to the berries better. Stick a toothpick into the base of the berry and swirl it in the chocolate. When you pull it out, make a little swirling motion so that the end doesn't drip. Stick the toothpick with the strawberry upside down onto a piece of styrofoam. You can also just lay them on a foiled sheet but since this was going into an arrangement, I didn't want to have one rounded and one flat side.

You can then sprinkle your strawberry with sweetened coconut shreds like I did or chopped nuts. You could even drizzle white chocolate onto it.

I led them dry overnight but they can be used 20-30 minutes after dipping.

For the arrangement, I grabbed some skewers and grapes. I cut out the pineapple rounds with cookie cutters. Make sure to skewer a grape underneath any of the fruit as this will prevent it from sliding down the skewer. Also try to cut the skewers as you go down the arrangement to give it a rounded bouquet shape. Use your imagination! You could use any kind of fruit or even vegetables!

Finally, I added some lettuce leaves to the base so that the flora foam and sticks wouldn't show. You really don't need to do this. As I said, I'm very particular about this kind of stuff. You could also use parsley or any curly leafy vegetation but I find lettuce to be the cheapest.

One thing to remember is that if you keep the arrangement refrigerated and then take it out, the chocolate strawberries will sweat as you can see from the picture. If you have a humid kitchen and leave it out though, they might melt. I think its better to put them in the fridge and I don't mind the sweat much. I guess, depending on your preference, you can time it so that you don't have to refrigerate it and it doesn't sweat or melt!

I think I cringed a little when people dove into it...lol...but I was really glad that people liked it. Some of the girls thought that it was from Edible Arrangements and couldn't believe that I had made it. All it took were some fruits, sticks, and a piece of foam.

Whipped Cream Frosting: Take 2

I love whipped cream way too much. I like it a lot better than buttercream frosting. After my first failed batch of whipped cream frosting, I decided to try again with a little more patience. I baked a batch of chocolate cupcakes to which the recipe is below. This is such an easy recipe and it tastes amazing! I ate 3 in one sitting....okay you caught me, it was 4.  I've made them a few times and each time think of trying a different recipe but just cant bring myself to.

The frosting came out much better too. I remembered to stop whipping as soon as the cream started forming stiff peaks. The peaks weren't as stiff as some pictures I had seen on the internets but I didn't want to overmix. After mixing, I put it into the fridge for half an hour to firm up a bit so that it wouldn't melt when I piped them. This frosting doesn't seem to be ideal for piping. It doesn't hold its shape very well. It would be much better for spreading even using just a round tip for blobs of icing. Next time I think I might try to add a stabilizing agent to help it become more stiff. It tasted great though, not too sweet and not too plain.

Recipe for Chocolate Cupcake

Ingredients
2 1/2 teaspoons vanilla extract
1 cup milk
1 cup boiling water
1/2 cup vegetable oil
2 eggs
1 teaspoon salt
1 1/2 teaspoons baking power
1 1/2 teaspoons baking soda
1 3/4 cup AP flour
2 cups sugar
3/4 cup unsweetened cocoa

Directions
1. Preheat oven to 350 F
2. Beat eggs, vanilla, milk, and vegetable oil
3. Sift and combine sugar, flour, cocoa, baking powder, baking soda and salt
4. Add wet ingredients to dry ingredients and beat until combined
5. Stir in boiling water until well combined and batter is thin
6. Pour batter into prelined baking tray
7. Bake 25 minutes and remove after testing with toothpick

Recipe for Whipped Cream Frosting

Ingredients
1 cup whipping cream
2 1/2 tablespoons sugar
2 teaspoons vanilla extract

Procedure
1. Pour cream, sugar, and vanilla into a bowl. 
2. Start blending with mixer.
3. Stop blending when mixture becomes thick and forms stiff peaks. Take care not to over mix!
4. Chill in fridge for 30 min and then pipe onto cupcakes
You can adjust the sugar to your taste. I also added some food coloring to mine.
